Prepared the night before, this vibrant chia pudding is ideal for a healthy breakfast on busy mornings.

Ingredients

  • 2 tbsp chia seeds

  • ½ cup water

  • 3 tbsp curd

  • Salt to taste

  • ¼ tsp black pepper

  • ¼ tsp roasted cumin powder

  • 2 tbsp cooked, grated beetroot

  • Optional Toppings
  • Fresh Coriander

  • Finely chopped cucumber

  • 1 tbsp fried groundnuts

  • Pumpkin seeds or sunflower seeds

Directions

  • In a bowl or jar, add chia seeds, curd, and water.
  • Stir very well to prevent clumping.
  • Cover and refrigerate overnight or for at least 4 hours.
  • Mix in the grated beetroot, salt, pepper, and cumin powder.
  • Stir once before serving to check consistency.
  • Add toppings of your choice and serve chilled.
