Ready in just 30 minutes, this flavorful curry is perfect for busy weeknight dinners.

Ingredients

  • 500 g boneless chicken, cut into bite‑size pieces

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tbsp curry powder

  • 1 tsp turmeric

  • 1 tsp garam masala

  • 1 can (400 ml) coconut milk or plain yogurt

  • 1–2 tbsp oil

  • Salt & pepper to taste

  • Fresh cilantro for garnish

Directions

  • Heat oil in a pan over medium heat. Add onions and garlic; sauté until soft.
  • Add chicken, curry powder, turmeric, garam masala, salt & pepper — cook until chicken is lightly browned.
  • Pour in coconut milk (or yogurt) and simmer 10–15 min until sauce thickens and chicken cooks through.
  • Garnish with cilantro and serve hot with rice or flatbread.
